大分県の蔵元紹介 Invitation to Oita Breweries倉光酒造合名会社 Soukou Shuzo GPC

Soukou Shuzo was founded in 1864, and the current president is the fourth generation. Initially, the company produced not only sake, but also shiro-sake, mirin(sweet sake for cooking), shochu, and other products. From the 1950's to the early 1960's, the Toji (master brewer) was the key to the production of sake, and the company was proud to be one of the leading sake breweries in Oita Prefecture, winning prizes at the National Sake Competition and the National Tax Bureau. With the decline in demand for sake, the current president of the brewery has changed his policy to produce small quantities of sake by hand, and has since produced a wide variety of sake, including Daiginjo, Junmai Daiginjo (Sara), Souju, Kouju, and ”Sake wa Kiyokimizu”.

水は大野川の伏流水、大分市産の酒造好適米「吟のさと」を使用し、酵母は香りの高い「高エステル生産性酵母」を使い、通常、純米酒の酒質としては味わい多く感じるお酒になりますが、蔵の技術の粋を集めて、綺麗に感じるように手造りで丁寧に仕上げた薫りの高いお酒です。

The subterranean water from the Ono River and "Gin no Sato,"rice, which is suitable for sake brewing and is grown in Oita City, and"high ester productivity yeast," which is highly aromatic are used for sake production. Normally, Junmaishu is a sake with rich flavor, but with the best of the brewery's technology, it is a highly fragrant sake that has been carefully crafted by hand so that it feels clean.

原材料は大分県産米「ヒノヒカリ」を60%まで磨き、お米を洗う際には低温の水に10kgずつ時間を計って洗い、蒸米は10kgずつ人力で自然放冷式にて作業をし、酵母は熊本活性酵母を使用して低温長期醪を基本に造りあげたお酒です。全米日本酒歓評会金賞・IWC銀賞・全国酒類コンクール一位受賞歴等多数あり、外務省における登録酒です。

The sake is made from "Hinohikari" rice produced in Oita Prefecture, polished to 60%, and the rice is washed in 10 kg of low-temperature water for a certain amount of time, and steamed in 10 kg of naturally cooled water. It has won many awards, including the gold medal at the National Sake Competition, the silver medal at IWC, and the first prize at the National Sake Competition.
