We are the only sake brewery in Takeda City, located in southwestern Oita Prefecture. We continue to brew sake in the cool climate at an altitude of 600m with the help of the groundwater flowing from Mount Kuju.
We work hard to brew junmai-shu and in addition to ordinary junmai-shu, we brew sake using the rare Kyushu kimoto and yamahai starter cultures. During the pressing process, we use a method called “fune” which slowly and thoroughly filters the sake.

This daiginjo uses Yamada Nishiki rice from Hyogo prefecture milled to 40%, and is aged for nearly 40 days in a long-term low temperature maturation process. This sake has a characteristic striking and ginjo aroma that spreads to every corner of the mouth, and a sweet, mild flavor with a crisp aftertaste. It pairs well with seafood, and is best served around 15 degrees.

江戸時代から明治時代にかけて作られていたやり方で、仕込みの際に使われる「乳酸」を添加せず、空気中の乳酸菌より乳酸を生み出すという手間のかかる仕込みとなっています。生酛特有の風味と甘み、酸味の濃潤な味わいが特徴で、肉料理と合わせやすく、燗酒に向いた商品となります。

This sake is produced in the way that was used in the Edo era through to the Meiji era, wherein lactic acid is not added when the sake is being brewed. Rather, lactobacillus present in the air produce lactic acid in a painstaking extra step in the process. It is characterized by the unique taste of the kimoto starter culture and a flavor with richly acidic tones. It goes well with meat dishes, and best suited to being served warm.

This umeshu (plum liqueur) is made using only ume plums from Oita Prefecture. After bottling, it is aged in a storehouse for at least one year before being shipped. It has a low alcohol content, so it can be chilled and enjoyed on its own. It goes well with all sorts of nuts.
