Our brewery, located in western Oita Prefecture, has been producing sake since 1712 amidst the severe winter climate, cool weather in general, and clear water in the locale. We use sake rice painstakingly cultivated by local contracted farmers, and endeavor to attentively produce high quality sake with a savory taste by hand to make available to all our customers. We are the only brewery in Kyushu that continues to use traditional yamahai yeast starters. This sake possesses a deep flavor and umami.

This daiginjo sake pairs well with cuisine and does not interfere with the taste of the food, nor does it ever fail to inspire the taste buds with its gorgeous aroma and flavor. This sake has been served in the restaurant on the cruise train Seven Stars run by JR Kyushu since it went into service.

“Gohyakumangoku” sake rice is milled to 60%, and used to brew this junmai-shu with a yamahai yeast starter. It has characteristically strong umami and flavors tinged with acidity. It is excellent chilled, or served “nuru-kan” style (warmed to 40°C). This sake pairs well with stews or other hot-pot dishes. It also goes well with foods with strong flavors such as Chinese cuisine.
