Established in 1804, which was also the 200th year of the Edo era. The company, which was also the family home of Junnosuke Inoue - a man who successively served as the Governor of the Bank of Japan and the Minister of Finance - has a history that spans the Taisho and Showa eras. The brand from this distillery has taken first prize at the Kumamoto Regional Taxation Bureau Sake and Shochu Awards (the honkaku shochu division) for 10 years running. It is also ranked number one in the barley shochu division of the National Liquor Competition (hosted by the Japan International Liquor Promotion Association).

This shochu has a moderate barley flavor and mellow sweetness in addition to a light body and delicate flavor that continue to surprise over time. This brand has won first prize at the Kumamoto Regional Taxation Bureau Sake and Shochu Awards countless times. It pairs well with any cuisine, but goes especially well with seafood such as grilled fish and sushi as well as deep-fried meat and fish dishes. The recommended ways to drink it are; on the rocks, mixed with water, or with a splash of hot water.

蔵は山々に囲まれ、湧水に恵まれた土地。豊かな水に加え、秋から春、盆地特有の寒冷なる気候は、酒造りに最も適しています。一切の添加物を加えず、米と米麹だけで造った純米酒。ドライかつシャープな口当たりと穏やかな酸味の中に米の温かみを感じる味わいです。おススメの飲み方は冷、もしくはぬる燗です。魚料理と合わせて召し上がれ。

From a brewery surrounded by mountains in a region rich with spring water. In addition to this abundance of water, the cold climate from fall to spring which is characteristic of mountain basins is optimal for sake brewing. This is junmai-shu, meaning brewed using only rice and koji (malted rice) with no additives whatsoever. It offers dry and sharp tones that coax out the original flavor of the rice balanced against its gentle acidity. The recommended way to drink it is chilled, or heated to around 40°C (nuru-kan). Best savored with fish dishes.

わずか200キロの極小造り。目と手で感じながら仕込みます。搾りも敢えて機械を入れず手搾りで、澱をゆっくり沈めたら、上澄みだけをそっとすくいます。火入れをすれば出来上がり。スッキリしつつも、深みのある味に仕上げました。無濾過のため微かに澱が残ります。チーズによく合うお酒です。

Made in extremely limited (no more than 200kg) batches. It is prepared while brewers inspect it visually and through touch. Pressing is done by hand without the use of machines. The sediments are allowed to slowly sink to the bottom, and then only the clear liquid on top is gently ladled out for the next stage. After pasteurization the sake is finally ready. The sake is now refreshing yet also finished with depth to its flavor. Being unfiltered, small traces of sediment remains. This sake goes well with cheese.
