Japanese Ingredients for Food Professionals

 

On September 22, 2015 JETRO Sydney held inaugural Japanese Food Masterclass. The event was designed to provide ideas, tips and methods for effectively blending traditional Japanese ingredients in Western Cuisine. Participants were shown how to both create authentic Japanese dishes and also how to fuse these traditional ingredients with Western dishes to create new and unique tastes and culinary experiences.

l   Mr Mark Normoyle

Mark is the Executive Chef RACV City Club Melbourne, Australia's leading 5 star private members Club where he leads a kitchen team of 75 chefs. Past president of 'Les Toques Blanches" executive chefs association. CCAV chef of the year 2011 and food tour host to countries including Japan, India, Vietnam and Cambodia. He has cooked as a guest chef and at charity events throughout Australia, Malaysia, Indonesia and Japan.

 

l   Mr Hideo Dekura

Hideo is a master of Shijoshin-ryu in Sydney. Furthermore he is a member of Food Professional Australia (formally Food Media Australia), Japan Master Chef Association, and a lecturer at the Sydney Sea Food School. He is the author of several Japanese cooking books and cooking videos.
