Japanese Rice
The art of making the perfect Japanese steamed rice requires patience and accuracy. But, it is not hard to make. In fact, you can be sure that the method below will guarantee a perfect and delicious steamed Japanese Rice, every time!

• Carefully measure the uncooked rice (1 cup of rice makes 1.5-2 servings)
• Wash the rice 2 to 3 times to remove the bran.
• Soak the rice for 30 minutes then rinse and drain.
• Place the rice in a pot and add 1.2 cups of water for every cup of rice.
• Place the pot on a medium heat and cover it until you hear it boil.
• Then, turn the heat to low for about 10 minutes.
• Turn the heat off and let the rice steam for 10 minutes more.

TIP: Covering the lid with a towel and covering the pot with it will help in better steaming.

• When the rice is done, dig to the bottom of the pot and scoop the rice upward. Try not to crush the grains. This will help fluff the rice and give it a delicious texture.

Dorayaki Cake
This Japanese take on pancakes is very addictive. Go ahead and try it.

Ingredients:

For the batter:
200gr Flour 2 eggs 80gr sugar 160 ml water 20ml Vegetable oil 30ml Mirin-Style seasoning 6gr Baking soda 10ml honey 5gr dates syrup

For filling:
Ready-made Japanese Sweet Red Bean Paste

Method:
Mix all the ingredients together to make a smooth batter. Heat a large non-stick pan over medium-low heat. Dip a paper towel in vegetable oil and coat the bottom of the pan with the oil. Then remove the oil completely (that's the key for evenly golden brown Dorayaki surface). With a ladle or a small measuring cup, pour 3 tbsp of the batter from (8 cm) above the pan to create (8 cm) diameter pancakes. Flip the pancakes only when small surface bubbles appear. Cook until golden brown from the other side.

Make a sandwich by filling two pancake Dorayaki with sweet red bean paste and serve with green tea. Meshiagare!
