Tofu, the versatile plant-based food, can be transformed into any meal!

Have you ever heard of "tofu", the savior of a healthy diet? Tofu is a food made by adding a coagulant to soy milk, the pressed juice of soybeans, to harden it. It has a mild taste with a hint of soybean flavor and a smooth texture. Remarkable is its high nutritive value! It provides plenty of vegetable protein, which is often lacking in our daily lives. Another great point is that it is low in calories. Normally white and square in appearance, it can be transformed during the production process to change its shape and texture, making it suitable for a variety of meals.

In this newsletter, we feature foods derived from tofu and give you some ideas on how to incorporate them into your everyday diet. Enjoy the endless Charm of tofu as it changes in different ways.

Fried tofu is made by cutting tofu into thin slices, draining off the water, and deep frying it in oil. Only the surface of the tofu is fried, giving it a savory and crispy texture, while at the same time allowing the smooth texture of the tofu to be enjoyed. Its hearty texture makes it a perfect substitute for meat, which is often used in salads! Because it soaks up flavor easily, if seasoned well with dressing or sauce, it is an excellent companion to a refreshing salad topping. If you fry tofu in oil until it is cubed, it works great as a textural accent. Frozen "tempura tofu" can be easily heated in a microwave oven to be enjoyed as authentic deep-fried tofu. It is made in HACCP-certified plants with a focus on quality control.

Yuba is a thin film that forms on the surface of the soy milk produced during the tofu production process when it is slowly heated in a hot water bath. The thin silky film that forms on the surface is carefully handmade, one sheet at a time, by craftsmen and was a favorite of Emperor Showa. "Frozen hikiage yuba" lavishly made with only domestic soybeans, is very useful in winter! It can be added to hot pots and starchy sauces, giving them a thicker texture. It is also delicious served in cold soup or dashi broth for a refreshing taste. Enjoy the healthy and preservative-free yuba made from 100% Japanese "Tsuyanrei" soybeans produced in Toyama.

Chimura has maintained the unique ratio of 70% tofu to 30% fish paste since its establishment, which gives the tofu its flavor and makes it extremely soft in texture. The soybeans are grown in Tottori Prefecture, and the water used is Tottori's famous water. No chemical seasonings or preservatives are used, and natural extracts of kelp, bonito, shiitake mushrooms, and other ingredients are used to bring out the natural flavor of the ingredients. It is best served with soy sauce or ponzu (Japanese citrus juice) for a refreshing taste, and is a perfect accompaniment to sake.
