*Product Outline
Since the quality improvement phosphate is banned in some states of the USA and are being deliberated in the EU, the health-minded, Konjac potato-derived food quality improvement agent is supposed to be a good replacement. This quality improving agent is made from finely powdered Konjac potato flour (glucomannan) and baking soda (alkali preparation).

The glucomannan in the agent enhances water retention and gelling power (which helps to keep the flavors stay in the food) and the baking soda (alkaline preparation) helps to prevent the weight loss of the product due to dripping and to improve the taste and texture of food as well. Glucomannan is different from other quality modifiers such as phosphate, lactate, and enzyme. It keeps the quality even after repeated thawing, heating and freezing of frozen raw materials, prevents dripping, and improves the texture of products. It also has effect of preventing discoloration.

However, when using glucomannan to process seafood (shrimp, fish, shellfish, octopus, squid, etc.), chicken, pork, cereals, and some vegetables, the amount to be added, processing time and method applied are also very important.
