Industrial Tourism in Japan
The three basic elements of sake brewing are considered to be water, rice and brewing techniques. We use an abundant amount of subsoil water that gushes out in our garden. Chishaku yosui, one of the Selected 100 Best Waters of Japan, flows just 100 meters away from our brewery. As its Japanese name suggests, Chishaku yosui has been well conserved by local people. The number of sake breweries with a long history in this area proves that water from Chishaku yosui is suitable for sake brewing. This area has 15 registered tangible cultural properties of Japan, including sake breweries.
